Firstly, sorry that I only saw your message now!
I think she's playing a C whistle. I have a C whistle but it's really sharp (should have returned it) so it's a bit hard for me to tell quickly. You're right that in order to play in the second instrumental section, she'd have to bend a note, which is doable but not easy.
But I tried that section on my Bflat whistle and it seemed to work. So she could have played it all on whistle if she switched from a C whistle at the beginning of the song to a Bflat whistle at the end.
Other whistle players - feel free to correct me if I'm wrong!
