Terry, your mum's cake sounds divine. I love German cake as well as spicy British fruit cake. An ideal combination! It's a cold, rainy day here today so I am now dreaming of a spicy fruit cake.
Your signature Christmas-style fruit cake sounds superb too. My mum makes a good English-style Christmas boiled fruit cake, (with more butter than I care to think about) but she doesn't use tropical fruit. It would make sense to, given we live in a subtropical climate - and Christmastime here is prime mango season!
She also doesn't soak the fruit in port as you do...so it's intriguing to know what that would taste like! Mmmm...

Thanks for the links, I'll check 'em out. That's handy that you did night classes in recording technology. My state library has a free recording studio and computers with Logic and Pro Tools on them, so I've slowly been getting more comfortable using the equipment, but I certainly need to learn more about mixing! The library staff have started to let me use a nice Neumann microphone which they normally keep locked away, but trust me with it. I like it so much more for recording vocals than the Shure SM58 which I've previously used.
They only let people use the studio 4 hours a week though, and my ensemble's been recording in there in recent weeks, but I wish I could spend all my time in there!
