I think that ornament you mention is something that I associate with Celtic music. (I thought it was a "turn", but I just looked up that term in wikipedia, and that may be slightly different). Here are some more examples (e.g., 0:21 and 0:40):



I think I can hear these ornaments because Celtic music is (relatively) new to me, so anything out of the ordinary stands out more. But I think it's harder for me to hear ornaments in pop music (except egregious melisma, which I dislike) because I've been listening to it all my life and take it for granted. In BallerinaTay's vocal part, I didn't notice the descending triplet figure (as you say, it's very subtle) until I went back and listened to the isolated track after you mentioned it. Neat. I think small things like that can really make a vocal part more expressive, even if you don't consciously notice them.

I always like learning about new things to listen for. That's one thing that makes this Harmony project so interesting -- since we are putting together the song track by track, we can hear some of those little things before they become hidden in the overall mix. Also, previously I never understood how artists could spend weeks or months recording a single song. I have a much better appreciation for that now!
