in general, you want to sample at twice the highest frequency you'll record. Humans can only hear up to 22KHz (at their best) so a sample rate of 44100 is fine (the settings I recommended are CD quality). If you find that your computer can't cope with this amount of data per second, you can turn this down a bit. (though Chip will certainly be able to tell the difference!)
